Sammen med en håndfull skjønne mennesker (slik blir det hver gang), skal vi boltre oss i frodige, fristende og friske, økologiske råvarer&amp;nbsp;&amp;nbsp;- fortrinnsvis uten gluten, meieriprodukter, hvitt sukker, gjær og tilsetningsstoffer. Denne våren skjer det mye på mat-fronten for meg, og jeg håper mange vil være med på moroa! Fredagskokkeleringene fortsetter fra 20. januar, det blir et par helgekurs i løpet av semesteret, ny bok er i støpeskjeen og&amp;nbsp;i slutten av februar&amp;nbsp;planlegger jeg en kulinarsik kurs-reise til Marokko - hvis jeg får med meg en gjeng på det. Alle kurs og annen aktivitet blir presentert her med flere detaljer om kort tid. Da blir det selvsagt også fyr på peisen og noe ekstra godt i koppen. På menyen står nyttig, fantastisk god og bærekraftig mat laget av grønnsaker, frukt, bønner, linser, røtter, nøtter, bær, urter og blomster. På menyen står nyttig, fantastisk god og bærekraftig mat laget av grønnsaker, frukt, bønner, linser, røtter, nøtter, bær, urter og blomster. Jeg klødde myggestikk på leggen med&amp;nbsp;storetåa og holdt intenst øye med landskapet der nedenfor, under haken og de ru plankene som luktet sjø og fisk.&amp;nbsp;På grunna sto det en bøtte med vann og tang og stein, knuste blåskjell og et ulikt antall krabber i varierende størrelser og farger. Tiden og verden sto stille, alt som fantes var tang-universet under meg, klukkelydene og store, fete, kjøttfulle skjell, salt og terner. Aldri ble jeg lei - og er det ennå ikke.&amp;nbsp;Hvis jeg skal forestille meg en idealpositur og en fordringsløs syssel, er dette et av de første og kjæreste bildene som dukker opp, og jeg finner stadig vekk påskudd for å legge meg langflat på magen med et snøre i tang.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;Krabbene jeg fisket opp i barndommen havnet som oftest på sjøen igjen mot slutten av dagen, bare en sjelden gang lot de voksne seg overtale til å la oss ta dem med opp til huset og den store gryta med det kokende vannet. Etter at vi hadde pirket bort alt vi syntes så ekkelt ut og alt vi var blitt advart mot å spise, var det bare klørne igjen, og dem satt vi lenge og suttet på og mente at mmmm .... selvfangst var det beste som fantes. Og det synes jeg fortsatt, men nå vet jeg heldigvis bedre enn å pirke bort alt det som gir smak til verdens beste fjæresuppe. En bøtte full av strandkrabber er et perfekt og eksklusivt utgangspunkt for en suppekraft du kan utbrodere etter tilgang og innfall. Sist helg ble den til med hvitløk, safran, chili, hvitvin og thaibasilikum, noen kongereker oppi og gode venner rundt forsommerbordet - og sesongen var åpnet!&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://1.bp.blogspot.com/-G_x9lZU7uTw/TfE8mbQLmJI/AAAAAAAAAT8/l2a1TkMkZSg/s1600/IMG_7084.jpg" imageanchor="1" style="clear: left; float: left; margin-bottom: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="266" src="http://1.bp.blogspot.com/-G_x9lZU7uTw/TfE8mbQLmJI/AAAAAAAAAT8/l2a1TkMkZSg/s400/IMG_7084.jpg" width="400" /&gt;&lt;/a&gt;&lt;/div&gt;Mer suppe og mye annen godis skal det bli i løpet av sommeren - snart står den ville svarthyllen i blomst på øya, og da lager jeg midsommerpannekaker på stilk. float: left; margin-bottom: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="400" src="http://4.bp.blogspot.com/-yMOskBbYFoE/TdbC8DY3tlI/AAAAAAAAAS8/AgjJzT9ZHu0/s400/IMG_1050.jpg" width="266" /&gt;&lt;/a&gt;Etter at denne impulsen skjøt fram i bevisstheten min,&amp;nbsp;og jeg bestemte meg for å lokke liv i de sovende sengene der ute som truer med å flate helt ut og hengi seg til plen-stadiet,&amp;nbsp;har det florert av&amp;nbsp;inspirasjonskilder.Blant dem var et kurs om økologisk og bærekraftig hagebruk jeg fikk muligheten til å være med på. En strålende solfylt torsdag nøt jeg å se og lytte til&amp;nbsp;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; color: black;"&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; color: black;"&gt;&lt;a href="http://www.gaiaarkitekter.no/tjome/"&gt;Gaia-gartner Marianne Leisner &lt;/a&gt;som har&amp;nbsp;&lt;/span&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; color: black;"&gt;årelang erfaring og kunnskap om nettopp dette.&lt;/span&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; color: black;"&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; color: black;"&gt;&amp;nbsp;&lt;/span&gt;&lt;/span&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none; color: black;"&gt;&lt;span class="Apple-style-span" style="-webkit-text-decorations-in-effect: none;"&gt;Marianne lærte oss blant mange ting om kompostering, om alt mellom himmel og (i sær) jord vi kan bruke som gjødsel, å sette poteter under epletreet, å lage pinnebed, beskjæring, gode råd mot jordrotter, dyrking på avispapir, hvilke planter som trives sammen - og hvor, om å tage det man haver rundt seg - slik jeg ellers er sterk tilhenger av - og om det rørende konseptet insekt-hoteller. En enestående god grunn til å la alle gamle stabler med takstein og tørre planker, rot og skrot i skjul og kroker, vedpaller og kvisthauger i fred. Eller til å leke med pinner og hull, lage trygge mellomrom og skjulesteder for alle dem som har verdens viktigste jobb - å bære støv kloden rundt og pollinere alt som vokser.&amp;nbsp;&lt;/span&gt;&lt;/span&gt;En perforert murstein og noen bambusrør er et perfekt utgangspunkt for et lite krypinn du kan henge under takskjegget på sydsiden eller et annet sted hvor det er tørt og lunt. Her - som så ofte ellers i livet - er det bare fantasien som setter grenser for hvordan vi kan skape innkvartering for pollen-heltene rundt oss. Og med stiklingene fulgte håpet - det lysegrønne - om at det framover skal bugne av tomater, paprika, prydmalve og hibiskus i solveggen hos oss.&amp;nbsp;Neste morgen våknet jeg tidlig, rastløs og før noen fikk sagt frokost, hadde jeg tømt kjøleskapet for noen gjenglemte poteter det hadde grodd små tykke, lyse haler på, lagt en sirkel våte aviser under det minste epletreet vårt, plassert de grodde rotfruktene i små hull jeg skar i papiret, og dekket alt sammen med en god favn tørt løv og gress-skjær. Innerst mot stammen la jeg et tykt lag av komposten fra i fjor og noen runde, gode stein-egg på toppen for å holde de små føttene på treet varme og ugress unna. Nå står det bedårende lille treet i fullt flor på tredje uken, og jeg er sikker på at det blomstrer ekstra vakkert og lenge i år som takk for den luksuriøse behandlingen. Så får vi se om potetplantene gjør nytten med å løse opp den hardpakkede jorda rundt treet og samtidig forsyne oss med noen knoller når det lir utpå sensommeren. Og innen den tid har jeg kanskje sådd dill til nypotetene, fått agurk på de små plantene jeg kjøpte på hagelagets vår-marked i går, dratt en makrell eller fem og invitert noen gode folk på jordeple-fest i hagen. Innimellom driver du med det du liker best og får lyst til akkurat da. Vi starter med lunsj tirsdag 12. juli og avslutter etter en lang frokost fredag 15. juli. Dette skjedde over middels sterk varme i en jernpanne med en bitteliten skvett god olivenolje. Mandlene kom oppi sammen med en teskje uraffinert havsalt, og det hele ble sakte gyllent mens den varme og salte mandelaromaen steg, og jeg stadig ristet&amp;nbsp;fast og bestemt i pannen. &amp;nbsp;&amp;nbsp;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Det kommer igjen, og igjen. Jeg hører meg selv utstøte det høyt og hemningsløst, og prøver å fylle det rommet som snart sprenges&amp;nbsp;av uttrykkstrang med noe mindre svulmende og klisjefylt, ja simpelthen noe mindre, men det eneste som kommer ut av munnen min er nettopp denne lyden. For det er mer en lyd enn et ord, og jeg omdefinerer herved disse fire stavelsene vi uttaler som Ha-le-lu-jah og kaller dem ...-...-...-... Det hele startet i går ettermiddag da en stor pose (500 g) smørbønner (butter beans) ble lagt i en bolle vann for bløtlegging. Tidlig i morges helte jeg fra bløtleggingsvannet og la bønnene over i en stor, tykkbunnet kjele som jeg fylte med vann så det dekket bønnene med 4-5 cm, og satte på komfyren. Da det hadde kokt noen minutter, fjernet jeg alt det hvite skummet som hadde lagt seg på toppen, hadde 3 friske greiner rosmarin, 1 ss uraffinert Atlanterhavsalt og 2 dl olivenolje i gryten og skrudde ned varmen til putre-temperatur. Det hele småkokte en times tid mens resten av folket her gjorde seg i stand til dagens dont. Før jeg gikk ut for å høre trost og stær i bjørka, skrudde jeg av platen så de små håpefulle skulle få en stille stund i fred. Og det var da jeg kom hjem fra runden min at jeg plukket opp en øse full og lot meg forføre&amp;nbsp;av de nyvåkne basunenglene. Jeg sier det igjen: ...-...-...- !&lt;br /&gt;&lt;br /&gt;Da denne euforiske rusen hadde lagt seg en smule, løftet jeg alle smørbønnene&amp;nbsp;med en hullsleiv&amp;nbsp;over i en stor bolle og moste dem til en glatt og silkemyk krem med stavmikseren. Innimellom spedde jeg på med kokekraften. Så knuste jeg en god neve frisk rosmarin sammen med en liten ts uraffinert salt og en solo-hvitløk i morter til en jevn og grønn pasta som jeg blandet inn i bønnemosen. kobber,  fosfor, mangan, jern og folat. De er fantastisk anvendelige og passer  sammen med alle grønnsaker og urter, fisk, nøtter, røtter og frø.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;Legg tørre kikerter i bløt over natten (eller arbeidsdagen), hell fra bløtleggingsvannet og skyll dem godt. Kok opp i en vid kjele og la ertene småkoke en times tid til de er møre. Har du latt kikertene spire et par døgn først, går det mye raskere å koke dem. Da smaker de enda mer, og næringsstoffene blir mer tilgjengelige for opptak i kroppen. &lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;Vil du lage en rask og næringsrik varmrett av kikertene, freser du dem i en dyp panne med god olivenolje og en støtt blanding av en hel solohvitløk, 2 ts spisskummen og 1 ts grovt, uraffinert havsalt. Dryss over et par-tre ss hele sesamfrø med skall, og legg i skiver av godt skrubbete økologiske sitroner. Press over litt ekstra sitronsaft og dra noen drag med pepperkvernen. Etter ca. 20 minutter tar du dem ut og blander inn et par ss støtt spisskummen og en halv ts salt til. Sett dem inn i ovnen igjen i 10-20 minutter. Og helt fri for mel og sukker. Need I say moore...?&lt;br /&gt;&lt;br /&gt;Du trenger:&lt;br /&gt;&lt;br /&gt;125 g smør&lt;br /&gt;200 g rettferdig og økologisk mørk sjokolade&lt;br /&gt;1 vaniljestang&lt;br /&gt;2 knivsodder kayennepepper&lt;br /&gt;2 økologiske appelsiner&lt;br /&gt;1 dl carobsirup (johannesbrødfruktsirup - fra velassorterte innvandrerbutikker)&lt;br /&gt;4-5 økologiske egg&lt;br /&gt;400 g kokte sorte bønner, godt skylt og avrent&lt;br /&gt;200 g grovt hakkede valnøtter &lt;br /&gt;&lt;br /&gt;Sett stekovnen på 175 grader. Smelt smør og sjokolade forsiktig over vannbad eller i en tykkbunnet kjele. Del vaniljestangen og skrap frøene ned i sjokoblandingen. &lt;br /&gt;Riv i skallet fra appelsinene og tilsett kayennepepper. Pisk egg luftig i en bolle for seg. Mos de kokte bønnene godt for seg. Bland egg og sjokoblandingen forsiktig sammen. Bland inn de moste bønnene og ha i valnøtter til slutt. Legg bakepapir i en springform så det dekker godt over kanten. Hell i røra og pynt med tynne skiver av appelsinene. Her blir det smakebiter, boksalg, signering, noen verdige ord og en stor skål for at "Bønner og Linser" endelig har fått en lillesøster!&lt;br /&gt;&lt;br /&gt;"Frokost" er tenkt som inspirasjon til en alternativ start på dagen, og byr på tips og oppskrifter til deilige og næringsrike måltider - i hovedsak fri for gluten, kumelksprodukter, sukker, gjær og tilsetningsstoffer.
